Healthy Choco Cookie Ideas

Here 2 ideas of cookies I’ve been making since I knew I was pregnant, specially to have another yummy option for nourishing my body with oats, bananas and nuts.

Option 1) Choco-Banana

Ingredients:

  1. 200 gr. Oats
  2. 100 gr. all-purpose Flour / you can replace it with almonds flour
  3. 3 big organic and ripe bananas (mashed)
  4. 1 backing soda teaspoon (without aluminium)
  5. 1 teaspoon of Cinnamon
  6. Bio Choco-chips (4 spoons approx)
  7. Nuts (optional)
  8. 100 gr. Butter (melted) / you can replace it with 2 spoons of olive oil and 2 big spoons of peanut butter
  9. 4 spoons of sugar cane.

Instructions:

  1. Preheat the oven at 180 ºC.
  2. In a plate, mash the bananas and add backing soda.
  3. In a bowl mix the oats with flour, sugar and melted butter.
  4. Add the mashed bananas to the bowl, mix well everything until it looks like a creamy paste.
  5. Add 3 spoons of choco chips and nuts (chopped), mix well and with a spoon start to place the mixture as cookies in the bake tray.
  6. Decorate with the spoon left of choco chips.
  7. Bake for 20 to 25 minutes.
  8. Serve the cold and enjoy!
*Here I also used for decoration, the last pieces of a chocolate bar (80% cacao) I had at home. And when I don’t have choco chips at home I also use cacao powder and berries.

Option 2) Choco-Coco

Ingredients:

  1. 200 gr. Oats
  2. 100 gr. almonds flour (I always use the almonds left from the milk I make at home)
  3. 100 gr. grated Coconut
  4. 1 spoon of chia seeds previously soaked in water (4 spoons)
  5. 1 backing soda teaspoon (without aluminium)
  6. 6 chopped dates
  7. Bio Choco-chips (4 spoons approx.)
  8. 1 spoon of olive or sunflower oil
  9. 1 to 2 spoons of veggie milk (check first if it’s really needed)
  10. 2 spoons of peanut butter
  11. 4 spoons of sugar cane.

Instructions:

  1. Preheat the oven at 180 ºC.
  2. In a bowl mix the oats with almonds, coconut, sugar and oil.
  3. Add the soaked chia seeds to the bowl, peanut butter, oil, dates and 3 spoons of choco chips, mix everything well until looks like a creamy paste.
  4. With a spoon start to place the mixture as cookies in the bake tray.
  5. Decorate with the left spoon of choco chips.
  6. Bake for 20 to 25 minutes.
  7. Serve them cold and enjoy!

The truth is that before being pregnant I was never interested on making cookies or baking stuff, but now it’s like I need to keep our home (the nest) worm 🙂
